Spicy beans with chorizo

Ingredients (14)

250 g white beans — soaked
or
2 butter beans — tins
2 Tbs fresh chillies — 573
2 carrots — diced
2 leeks — sliced
2 celery stalks — finely chopped
1 bay leaves
1 Tbs fresh thyme
1 Tbs red chillies — finely chopped
red pepper — sliced
1 chorizo
1 cloves garlic — cloves, finely chopped
2 tomatoes — finely chopped
salt and freshly ground black pepper — to taste

Method:

Heat the olive oil in a saucepan. Add the carrots, leeks, celery, chilli, bay leaf and thyme and fry for a Heat the olive oil in a saucepan. Add the prepared beans with about ½ cup of the liquid and the tomatoes and leave to simmer for 10-15 minutes until the tomatoes are soft.

Season with salt and pepper to taste and serve with some fresh bread.
