Spicy apricot chutney

Ingredients

  • 250
    g
    dried apricots, halved
  • 2
    onions, chopped
  • 50
    g
    sultanas
  • 10
    ml
    chopped fresh ginger
  • 250
    ml
    white wine vinegar
  • 10
    ml
    mustard seeds
  • 2
    ml
    ground turmeric
  • 2
    ml
    dried crushed chillies
  • 3
    ml
    salt
  • 250
    g
    yellow sugar
 

Method

90 minutes
 
Place all ingredients, except sugar, in a saucepan. Bring to the boil. Reduce heat to simmer slowly and add sugar. Stir until sugar has dissolved. Continue to simmer gently for about 90 minutes, stirring occasionally. When mixture is thick, remove from heat. Spoon into warm, sterilised jars and seal well. Store in a cool place until ready to use. This tasty chutney is great with chicken, cold meats and curries. Makes 500 ml.
