Spicy Potatoes with cauliflower and spinach

Ingredients

  • 500
    g
    baby potatoes
  • 1
    head
    cauliflower, broken into florets
  • 1
    clove garlic, crushed
  • 1
    red chilli, seeded and cut into rings
  • 5
    ml
    ground cumin seed (jeera)
  • 5
    ml
    ground coriander
  • 5
    ml
    masala
  • 2
    ml
    turmeric
  • 125
    g
    spinach, cut into strips
  • salt and black pepper to taste
 

Method

+/- 20 min
 
Boil the potatoes until soft and remove the skins if desired. Boil the cauliflower in a little water until just soft but still crispy. Drain well and set aside. Sauté the garlic, chilli, cumin, coriander, masala and turmeric for a minute in a little oil. Add all the vegetables and stir-fry for 1-2 minutes until well blended with the seasonings and heated through. Season with salt and pepper if necessary and serve immediately. Serves 4.
