Spicy Indian grilled chicken

    small lemon, juice
  • olive oil

    ground cumin

    coriander
  • 15
    ml
    good quality curry powder

    crushed dried chilli or chilli powder (optional)
  • 4
    cloves garlic, crushed
  • 5
    ml
    turmeric
  • 15
    ml
    finely chopped fresh coriander
 

Method

 
Wipe chicken with a damp cloth, squeeze lemon juice over and set aside. MARINADE: Mix ingredients well. Slowly add oil to form a thick paste. Rub paste over chicken pieces and marinate for at least 15 minutes (30 minutes, if possible). Meanwhile, preheat grill. Grill chicken, skin side up, until skin is dark brown and crisp, about 5 minutes. Turn chicken, reduce heat or lower grill rack and continue to grill, turning once, for 12 to 20 minutes, depending on portions used. Serve with Naan bread (available from selected supermarkets and delis) and a chopped salad flavoured with lots of fresh coriander.
