Ingredients (8)

140.00 g butter
140.00 g treacle sugar
2.00 eggs — large, slighly beaten
285.00 g flour — self-raising
60.00 ml milk
6.00 cardamom — pods
3.00 figs — preserved, chopped
100.00 g walnuts — chopped

Method:

Preheat oven to 180 ºC. Beat butter and sugar together until light. Beat in egg, a little at a time. Stir in flour and milk. Remove seeds from cardamom pods and grind until fine. Stir into mixture with the figs and walnuts.
Spoon into a greased and lined loaf tin and bake in the oven for 1 hour, or until a skewer inserted in the centre comes out clean. Cool in the tin for 15 minutes before turning out. Makes 1 loaf (22,5 x 11,5 cm).
