Spiced walnut and fig loaf

    treacle sugar

    large eggs, lightly beaten

    self-raising flour

    milk
  • 6
    cardamom pods
  • 3
    preserved figs, coarsely chopped

    walnuts, chopped
 

Method

Preheat oven to 180 ºC. Beat butter and sugar together until light. Beat in egg, a little at a time. Stir in flour and milk. Remove seeds from cardamom pods and grind until fine. Stir into mixture with the figs and walnuts. Spoon into a greased and lined loaf tin and bake in the oven for 1 hour, or until a skewer inserted in the centre comes out clean. Cool in the tin for 15 minutes before turning out. Makes 1 loaf (22,5 x 11,5 cm).
