A healthy recipe for sweet potato and butternut which have a great beta-carotene content and are full of flavour.
 
Spiced, roasted butternut and sweet potato shards

Ingredients

 
  • 1
    large butternut, peeled and thinly sliced into cresents
  • 4
    sweet potatoes, thinly sliced
  • 60
    ml
    PnP Finest extra-virgin olive oil
  • 1
    Tbs
    cumin seed
  • 1
    ml
    whole coriander seeds, crushed
  • 2
    Tbs
    PnP brown sugar
  • 3
    Tbs
    PnP balsamic vinegar
  • 1
    pinch
    salt and milled pepper
Servings: Change Serving
 
 

Method

 
Preheat oven to 180ºC

Toss vegetables with oil, spices, sugar and vinegar.

Spread onto a baking tray and season.

Roast for 30-40 minutes or until golden and caramelised.
