Spiced roasted butternut and sweet potato shards

A healthy recipe for sweet potato and butternut which have a great beta-carotene content and are full of flavour.

Ingredients (8)

1 butternut — peeled, deseeded, sliced
4 sweet potatoes — sliced
60 ml pnp finest extra-virgin olive oil
1 Tbs cumin — seeds
1 ml coriander — seeds, crushed
2 Tbs pnp brown sugar
3 Tbs balsamic vinegar
1 pinch salt and freshly ground black pepper

Method:

Preheat oven to 180ºC

Toss vegetables with oil, spices, sugar and vinegar.

Spread onto a baking tray and season.

Roast for 30-40 minutes or until golden and caramelised.
