Spiced mince and pasta salad

    oil
  • 500

    minced veal
  • 5

    ground coriander
  • 5
    ml
    ground cumin
  • 1
    ml
    chilli powder
  • 3
    ml
    paprika
  • 1
    red pepper
  • 1
    yellow pepper
  • 150
    g
    green beans, chopped
  • 250
    g
    macaroni or penne
  • 10
    ml
    chopped fresh coriander
  • Dressing:
  • 30
    ml
    light soya sauce
  • 60
    ml
    dry sherry
  • 15
    ml
    honey
  • 30
    ml
    tomato sauce
 

Method

 
Heat oil in pan, add mince and spices and cook, stirring until mince is browned.
Remove from heat and cool.
Quarter peppers, removing seeds and membrane.
Grill peppers, skin side up, until skin blisters and blackens.Peel peppers and cut into cubes.
Cook green beans until just tender, then rinse under cold water and drain.
Combine mince mixture, peppers and beans in a bowl. Cover and refrigerate for 1 hour.
Add pasta to 3 litres of boiling, salted water.
Boil uncovered until just tender, then drain.
Combine mince mixture, pasta, coriander and dressing in a bowl and mix well.
To make dressing:
Combine all ingredients in a jar and shake well.
