Spiced lentils

Ingredients

  • 250
    g
    lentils
  • 50
    ml
    oil
  • 2
    cloves garlic, crushed
  • 5
    ml
    ground cumin
  • 5
    ml
    curry powder
  • 5
    ml
    cayenne pepper
  • 200
    ml
    vegetable stock
  • 3
    sprigs fresh coriander, chopped
 

Method

15 minutes
 
1 Put lentils in a saucepan, cover with water and bring to the boil. Reduce heat and simmer until tender. Drain and set aside. 2 Heat oil in a large frying pan and fry garlic for 2 minutes. Add the lentils, spices and stock and season with salt. Simmer gently for 10 to 15 minutes. 3 Serve sprinkled with chopped coriander. Serves: 4 Preparation time: 10 minutes Cooking time: 15 minutes
