Spiced lamb with melting onions

    large lemon, quartered
  • 2
    large onions, thickly sliced

    ml
    cumin seeds
  • 5
    ml
    salt
  • 60
    ml
    olive oil
  • 450
    g
    leg of lamb, cubed
  • basmati rice to serve
  • fresh coriander sprigs to garnish
 

Method

 
Toss lemon quarters, onions, cumin, salt and olive oil with lamb, to coat lamb well. Spread out evenly on a baking sheet and grill for 15 minutes, or until lamb is well charred but still pink at centre. Stir mixture as it browns. Serve with basmati rice, garnished with coriander sprigs.
