Ingredients (8)

10.00 ml salt
1.00 Litres water
1.00 kg kumquats
300.00 g castor sugar
1.00 cinnamon — stick
10.00 ml cloves
8.00 cardamom — pods, bruised
1.00 Litres vinegar — white wine

Method:

Dissolve salt in water and bring to boil. Pour over kumquats in a bowl and allow to stand for 12 hours to remove bitterness. Drain.
Heat sugar and spices in vinegar over low heat until sugar dissolves. Simmer for 5 minutes.
Ladle kumquats into hot and sterilised preserving jars and pour boiling mixture over. Seal immediately and store in a cool place for 2-3 months.
Makes 1 litre.
