Spiced iced tea

    ml
    water
  • 500
    ml
    sugar
  • 90
    ml
    rooibos tea
  • big handful fresh mint
  • 6
    whole allspice
  • 4
    star anise
  • 2
    cinnamon sticks
  • 1
    thumb of fresh ginger, cut into pieces
  • 10
    cloves
  • 3
    lemons, rind
  • 3
    stalks lemongrass, finely chopped
  • 45
    ml
    Ceylon tea
  • 3
    lemons, juice (or more or less to taste)
  • 1
    Litres
    apple juice
  • 2
    Litres
    water or sparkling water
 

Method

 
Bring all the ingredients, exept Ceylon tea, lemon juice, apple juice and water, to the boil.
Remove from the heat, add the Ceylon tea (do not stir) and infuse, covered with a lid, for no longer than 2 to 5 minutes.
Decant through a fine strainer lined with cheesecloth, onto ice cubes.
Add the lemon juice, apple juice and water.
Serve with lots of lemon slices.
