Spiced fish soup

    olive oil

    leeks, sliced
  • 3
    large tomatoes, skinned and chopped
  • 2
    cloves garlic, crushed

    paprika
  • 1
    stick cinnamon

    ground cloves
  • 2
    ml
    ground allspice
  • 1
    ml
    ground cumin
  • 100
    ml
    rice
  • 2
    medium potatoes, cubed
  • 2
    Litres
    fish or vegetable stock
  • 500
    g
    fresh fish, cut into large cubes
  • 1
    bunch spinach, trimmed and sliced
  • 25
    ml
    lemon juice
  • 2
    ml
    sugar
  • salt and freshly ground pepper, to taste
 

Method

30 min
 
Heat the oil in a large saucepan. Add the leeks, tomatoes, garlic and spices and sauté for 5 minutes.
Add the rice, potatoes and stock. Bring to the boil, then reduce the heat and allow to simmer for 20 minutes.
Add the fish, spinach, lemon juice and sugar and cook for a further 5 minutes.
Season to taste and serve immediately.
