Spiced coconut with peanuts

    desiccated coconut
  • 3
    ml
    dried garlic flakes
  • 30
    ml
    dried onion flakes
  • 2
    ml
    ground coriander
  • 2
    ml
    ground cumin
  • 2
    ml
    salt
  • 125
    ml
    roasted unsalted peanuts
 

Method

 
1. Toast the coconut in a frying pan over medium heat until golden. Add the garlic and onion flakes, crushing the onion into small pieces. Fry until the coconut becomes a deep golden brown. 2. Add the coriander, cumin and salt, stir well and remove from the heat. Allow to cool and stir in the peanuts. Serves 6.
