Ingredients (7)

125.00 ml desiccated coconut
3.00 ml garlic — dried, flaked
30.00 ml onion — flakes
2.00 ml coriander — ground
2.00 ml cumin — ground
2.00 ml salt
125.00 ml peanuts — roasted, unsalted

Method:

1. Toast the coconut in a frying pan over medium heat until golden. Add the garlic and onion flakes, crushing the onion into small pieces. Fry until the coconut becomes a deep golden brown.
2. Add the coriander, cumin and salt, stir well and remove from the heat. Allow to cool and stir in the peanuts.
Serves 6.
