    aubergine
  • 10
    ml
    salt
  • 5
    ml
    ground turmeric
  • oil for frying
  • lemon juice
  • 1
    fresh red chilli, seeded and chopped
  • 5
    ml
    mustard seeds
  • 1
    small onion
  • 30
    ml
    coconut cream
 

Method

 
1. Slice the brinjal, lengthways, rub with salt and turmeric, place in colander to drain. 2. Pat dry and fry slowly in oil until golden brown on both sides. Drain on absorbent paper. 3. Mix lemon juice with chilli, mustard seeds, onion and coconut milk in pan. Roll brinjal slices, place in sauce and heat through. Serve hot piled on a serving plate.
