Ingredients (12)

2.00 bread — thick white slices, crusts removed
milk
500.00 g beef mince — lean
salt and freshly ground black pepper
1.00 carrots — finely diced
10.00 ml lemon — peeled and grated
1.00 onion — medium, finely chopped
8.00 fresh coriander — sprigs, finely chopped
10.00 ml mustard — powder
5.00 ml chilli paste
125.00 ml yoghurt — natural
sunflower oil — for frying

Method:

1. Place bread in a bowl, just cover with milk and soak until softened. Squeeze gently to remove excess milk, so that bread is still moist but not saturated.
2. Place beef mince in a large bowl and add soaked bread, salt, pepper, carrot, lemon peel, onion, coriander, mustard and chilli paste. Mix until well blended. Mix yoghurt in lightly.
3. Dip your hands in water, then shape handfuls of mince lightly into medium-sized patties.
4. Pour oil to 2 cm deep in the pan and heat until piping hot. Carefully add patties and fry, turning them over quickly from time to time, for 12 to 15 minutes, or until crust is firm and lightly browned on both sides. Make sure the temperature is not too high, and turn frequently, as these patties are inclined to stick and burn because they are so moist.
5. Serve immediately with rosemary potato crisps (see recipe) and sweet pepper topping (see tips).
