Spiced apple loaf

Method

 
Recipes tested in a 600 watt microwave oven. Spray a 25 x 12 x 8 cm microwaveproof loaf pan with non-stick spray. Line the bottom of the pan with paper towelling. Sift the cake flour, salt, spices and bicarbonate of soda together in a mixing bowl. Add the brown sugar and mix. Add the eggs and oil, beating well for about two minutes. Add the fruitcake mix and apples and mix well. Turn into the prepared pan and microwave for 12 to 14 minutes on 70 per cent power. Leave for five minutes before turning out onto a wire rack to cool. Remove the paper towelling and sprinkle a little sugar over the crust if desired. Slice and serve. Makes a medium-sized loaf.
