Spice cake with guavas

    soft butter
  • 900
    ml
    icing sugar
  • 30
    ml
    smooth guava jam
 

Method

 
Preheat the oven to 190 ºC (375 º). Grease a 20 x 20 cm tin with margarine. Cream the butter and castor sugar until pale and fluffy. Add the eggs, one at a time, beating well after each addition. Add the jam and blend well. Sift the dry ingredients together and add to the butter mixture alternately with the milk. Blend well after each addition. Pour into the prepared tin and bake for about 40 - 60 minutes or until a testing skewer comes out clean when inserted into the centre of the cake. Cool briefly in the tin before turning the cake out on to a wire rack to cool completely. Divide the cake into two layers and sandwich them together with smooth guava jam. To make the icing, cream the butter then add the icing sugar by the spoonful, beating well after each addition. Add the guava jam and blend. Decorate the cake with the icing. Makes a medium-sized cake.
