Ingredients (16)

750.00 g baby potatoes — washed
15.00 ml sunflower oil
10.00 ml capers — drained
1.00 garlic — large cloves, crushed
30.00 ml pickled onions — chopped
5.00 ml fresh parsley — chopped
1.00 carrots — thinly sliced
60.00 ml peas — frozen, cooked
1.00 red pepper — small, diced
10.00 ml fresh dill — chopped
15.00 ml vinegar — red wine
2.00 eggs — hard-boiled, chopped
DRESSING
125.00 ml mayonnaise — thick
15.00 ml sour cream
30.00 ml smooth plain cottage cheese — chive-flavoured
3.00 ml mustard — mild

Method:

Boil the potatoes until tender, drain and cool. Peel if desired.
Heat oil in a medium saucepan.
Add the capers and fry for 10 seconds, then remove from the heat.
Add garlic, pickled onions, parsley, carrot, peas, pepper, dill, vinegar and eggs.
Add to the potatoes, mix well and leave to stand for 15 minutes.
Season to taste with salt and freshly ground black pepper.
Mix together the dressing ingredients and stir into the salad.
