Special potato salad

Ingredients

    g
    baby potatoes, washed
  • 15
    ml
    sunflower oil
  • 10
    ml
    capers, drained
  • 1
    fat clove garlic, crushed
  • 30
    ml
    pickled onions, chopped
  • 5
    ml
    freshly chopped parsley
  • 1
    large carrot, peeled and finely sliced
  • 60
    ml
    frozen peas, cooked for a minute and cooled
  • 1
    small red pepper, diced
  • 10
    ml
    freshly chopped dill
  • 15
    ml
    red wine vinegar
  • 2
    hard-boiled eggs, shelled and coarsely chopped
  • DRESSING
  • 125
    ml
    thick mayonnaise
  • 15
    ml
    sour cream
  • 30
    ml
    chive-flavoured smooth cottage cheese
  • 3
    ml
    milk mustard powder
 

Method

15 to 20 minutes
 
Boil the potatoes until tender, drain and cool. Peel if desired.
Heat oil in a medium saucepan.
Add the capers and fry for 10 seconds, then remove from the heat.
Add garlic, pickled onions, parsley, carrot, peas, pepper, dill, vinegar and eggs.
Add to the potatoes, mix well and leave to stand for 15 minutes.
Season to taste with salt and freshly ground black pepper.
Mix together the dressing ingredients and stir into the salad.
