    large pear, peeled, cored

    wine vinegar

    sliced fresh fennel bulb

    chopped walnuts, toasted

    olive oil

    fennel fronds, finely chopped

    cheese, cubed
  • salt and freshly ground black pepper
  • 250

    sliced smoked salmon trout
  • bunch watercress
 

Method

 
1. Combine pear (cut into 1,25 cm pieces) and vinegar. Add fennel, walnuts, oil, fennel fronds and cheese cubes. Season with salt and freshly ground black pepper. 2. Arrange a slice of salmon trout on a bed of watercress on four serving plates. Spoon a quarter of the pear mixture on to the centre of each piece of trout. Garnish with fronds of fennel. Serves 4 as an appetiser
