Special fried rice

    firm fish fillets, cubed

    red pepper, seeded and diced

    frozen peas

    cooked shelled prawns

    soy sauce

    chopped fresh coriander
 

Method

 
Cook both rice varieties according to packet instructions. Drain and cool. Whisk the eggs and sesame oil together. Heat a teaspoon of oil in a pan and pour in the egg mixture. Heat slowly until just set underneath, flip over and cook until done. Slide from the pan, roll up lightly and cut into thin strips. Stir-fry the fish cubes in the remaining oil until done, add the spices, sugar and vegetables and stir-fry for another minute. Add the rice, omelette strips and prawns and stir-fry until heated through. Add 15-30 ml (1-2 T) soy sauce and fresh coriander just before serving. Serves 4-6.
