Add the sugar and salt to the whisked egg and beat together for one minute. Add half the milk and the oil.
Sift together the flour, bicarbonate of soda and baking powder and using a wooden spoon, gradually stir into the egg and milk mixture until smooth and lump-free. Do not overmix.
Add the remainig milk, oat bran and apple and mix until just blended. Rest the batter for 10 minutes.
Heat a non-stick pan and grease with cooking spray.
Drop tablespoonfuls of the batter into the pan and cook over medium heat until bubbles form on the surface and the bottom is pale brown.
Turn and cook until brown on the other side.
Serve with marmalade or apricot jam and low-fat cheese but no butter.
