Ingredients (15)

30.00 ml fresh chillies — 573
2.00 onion — chopped
900.00 g beef mince — lean
30.00 ml flour — cake
25.00 ml chillies — powder
15.00 ml cumin — ground
15.00 ml dried oregano
820.00 g tomatoes — tinned
2.00 stock cube — beef, crumbled
2.00 ml salt
2.00 ml black pepper — freshly ground
2.00 peppers — red or green, deseeded, diced
410.00 g red kidney beans — tinned
45.00 ml fresh coriander — chopped
rice — cooked, to serve

Method:

Heat the oil and sauté the onions until golden. Add mince and stir continuously until browned. Sprinkle over the flour, spices and origanum then add the tomatoes, stirring until thickened. Stir in the stock cubes, seasoning and peppers. Cover and simmer gently for 15 minutes until the peppers are tender. Add the beans and coriander to the mince, return to the boil then serve with rice.
