Sparkling pear punch

    ml
    sugar
  • 100
    ml
    lemon juice
  • 6
    firm pears, skinned
  • 500
    ml
    fruit juice mixture (peach, pear and plum juice)
  • 750
    ml
    dry white wine (you may need more)
  • 750
    ml
    sparkling grape juice
 

Method

 
Heat the sugar and lemon juice, stirring to dissolve the sugar before the mixture comes to the boil. Simmer until a syrup is formed. Pour boiling water over the pears and leave for a short while, dry and dice. Pour the sugar syrup over the pears, add the fruit juice mixture and white wine and chill until needed. Add the sparkling grape juice just before serving. Serve with ice and decorate with sprigs of fresh mint.
