    pork spareribs, cut into single ribs and halved
  • BASTING SAUCE
  • 150
    ml
    strong rooibos
  • 30
    ml
    balsamic vinegar
  • 30
    ml
    brown sugar
  • 60
    ml
    oil
  • 60
    ml
    Worcestershire sauce
  • 35
    ml
    sweet chilli sauce
  • 15
    ml
    paprika
  • 5
    ml
    mustard powder
  • 2
    garlic cloves, finely chopped
  • 1
    onion, grated
 

Method

 
Combine the ingredients for the rub and rub into the spareribs.
Leave to rest for about 30 minutes.
Preheat the oven to 180 °C.
Mix the basting sauce ingredients and coat the spareribs with the mixture.
Place the ribs in an ovenproof pan and roast for about 40 minutes or until the meat is tender.
Turn every 10 minutes.
Leave to cool and then chill.

Tip:
To take the spareribs on a picnic, cook them the night before and leave to cool completely. Chill
Pack into a container with a tight-fitting lid and surround with ice packs to keep cool.
