Ingredients (15)

3.00 garlic — cloves, crushed
oil
1.00 stock cube — chicken or beef
500.00 ml water — boiled
100.00 g brown sugar
250.00 ml chutney
30.00 ml honey
50.00 ml lemon juice
50.00 ml tomato sauce
15.00 ml Worcestershire sauce
2.00 ml ginger — ground
5.00 ml salt
cloves — ground, pinch
2.00 kg pork ribs
SAUCE
2.00 onion — sliced

Method:

Sauté the onion and garlic in a little heated oil until soft. Dissolve stock cube in water and add to the onion with the remaining sauce ingredients. Simmer slowly for about 15 minutes until fairly thick. Stir every now and then to prevent the sauce from sticking to the base of the pan. Cool.
Place the pork ribs in an ovenproof dish and pour the sauce over. Cover. Leave for at least 1 hour. Preheat the oven to 160 ºC (325 ºF). Bake the meat for about 60 – 90 minutes until tender. Remove the lid, turn on the oven grill and grill the ribs until golden brown. Serve with potatoes baked in their jackets and a mixed salad. Serves 4-6.
