Spanish rice with chorizo wraps

    ml
    rice
  • 45
    ml
    oil
  • 1
    onion, chopped
  • 1
    garlic clove, crushed
  • 1
    green pepper, diced
  • 1
    red pepper, diced
  • 400
    g
    (1 can) chopped tomatoes
  • 2
    ml
    ground ginger
  • 3
    ml
    dried basil
  • salt and black pepper
  • 2
    chorizo sausages
  • 4
    tortillas
 

Method

 
Cook the rice according to the packet instructions.
Heat the oil in a large pan and stir-fry the onion, garlic and peppers until just done.
Add the tomatoes, seasoning and rice and heat until the mixture is thick and fragrant.
Fry the sausages until done, slice and add to the rice mixture.
Divide the mixture among the tortillas and roll up.
Serve with a salad.
