Spanish pie

  • olive oil
  • 1
    large onion, finely chopped
  • 3
    cloves garlic, crushed
  • 2
    spicy, smoked sausages, diced
  • 4
    ripe tomatoes, skinned, seeded and chopped
  • 2
    cold cooked potatoes, cubed
  • 5
    fresh basil leaves, torn into small pieces
  • 10
    extra-large eggs, beaten
  • salt and milled pepper
 

Method

 
Heat olive oil in a large, heavy-based pan. Sauté onion and garlic over low heat until onion is softened but not browned, 5 minutes. Add sausages, tomatoes, potatoes and basil. Cover and simmer for 5 to 6 minutes or until tomatoes have softened. Add eggs, salt and pepper to taste and continue cooking until set, but still creamy on top. Place under a hot grill until bubbling. Serve piping hot, sliced into wedges.
