Ingredients (9)

fresh chillies — 573
1.00 onion — finely chopped
3.00 garlic — cloves, crushed
2.00 sausages — spicy, diced
4.00 tomatoes — peeled, deseeded and chopped
2.00 potatoes — cold, cooked, cubed
5.00 fresh basil — torn
10.00 eggs — large, beaten
salt and freshly ground black pepper

Method:

Heat olive oil in a large, heavy-based pan. Sauté onion and garlic over low heat until onion is softened but not browned, 5 minutes.
Add sausages, tomatoes, potatoes and basil.
Cover and simmer for 5 to 6 minutes or until tomatoes have softened.
Add eggs, salt and pepper to taste and continue cooking until set, but still creamy on top.
Place under a hot grill until bubbling. Serve piping hot, sliced into wedges.
