Ingredients (11)

750.00 g hake fillets
30.00 ml vegetable oil
1.00 onion — sliced
1.00 red pepper — sliced
1.00 green pepper — sliced
2.00 garlic — cloves, crushed
410.00 g tomatoes — chopped
250.00 ml wine — white
3.00 ml Tabasco sauce
1.00 bay leaves
salt and freshly ground black pepper

Method:

1. Preheat oven to 180 ºC. Using a sharp knife, skin fish and cut flesh into chunks.
2. In a frying pan, heat oil and fry fish lightly on both sides. Remove and keep warm.
3. Add onion, peppers and garlic and sauté for about 5 minutes until soft. Add tomatoes and wine, bring to the boil and simmer for 5 minutes. Add Tabasco sauce.
4. Layer fish and vegetable sauce in a casserole, ending with sauce. Add bay leaf and seasoning. Cover and bake in oven for 1 hour.
5. Serve hot with crusty rolls and a salad.
