Spaghetti with feta, peppers and rocket

    olive oil
  • 15
    ml
    lime or lemon zest
  • 2
    garlic cloves, crushed
  • 1
    red chilli, seeded and chopped
  • 1
    each small red, yellow and green sweet peppers, thinly sliced
  • 450
    g
    organic spaghetti, cooked al dente
  • 150
    g
    rocket
  • 45
    ml
    lime or lemon juice
  • 150
    g
    feta cheese
  • freshly ground black pepper
 

Method

 
Heat oil in a large frying pan. Add zest, garlic, chilli and peppers and cook for 1 minute. Add spaghetti and toss to coat and heat through. To serve, toss rocket and juice through pasta and pile into serving bowl. Top with feta and freshly ground black pepper. Serves 4.
