Spaghetti with cabbage

    g
    spaghetti
  • 1
    onion, sliced into rings
  • 2
    leeks, sliced into rings
  • 2
    cloves garlic, crushed
  • oil
  • 10
    ml
    ground ginger
  • 10
    ml
    curry powder
  • 600
    g
    chicken breasts, deboned and sliced in strips
  • 400
    g
    (about a quarter head) cabbage, shredded
  • 60
    ml
    tomato sauce
  • salt and black pepper to taste
 

Method

+/- 20 min
 
Cook the spaghetti in rapidly boiling salted water till just soft. Drain and set aside. Sauté the sliced onion, leek and garlic in a little oil till soft. Add the ginger and curry powder and stir-fry for about 1 minute. Add the chicken strips and stir-fry till done, but not dry. Add the cabbage and stir-fry till the cabbage is just tender but still crisp. Add the spaghetti and mix. Add the tomato sauce, mix and heat till warmed through. Season to taste with salt and black pepper. Serves 4-5.
