Spaghetti with Ricotta, lemon and spinach

  • 450
    g
    spaghetti
  • salt and pepper
  • 2
    Tbs
    olive oil
  • 1
    cup
    ricotta
  • 1/2
    Tbs
    grated lemon zest
  • a pinch of nutmeg
  • 1
    bag of baby spinach
 

Method

Put the salted water in a large pot and bring it to boil and cook the spaghetti until they are dente, which is approximately about 10 minutes.

Take one bowl and stir the following ingredients together – ricotta, lemon zest and olive oil, with a pinch of nutmeg, seasoning all that with salt and pepper.

Drain the spaghetti and save 1 cup of the cooking water, put the spaghetti back to the pot and then add the mixture you have previously made, spinach and ½ of the cooking water.

Toss it around and add more pasta water, if it is necessary, and serve it while is hot.
