Soya, orange and vanilla poached chicken

    free-range chicken
  • 1500
    ml
    chicken stock
  • 750
    ml
    soya sauce
  • 250
    ml
    brown sugar
  • 24
    garlic cloves, peeled
  • 1
    20cm-piece ginger, sliced
  • 4
    star anise
  • 2
    vanilla pods
  • 3
    cinnamon sticks
  • 1
    tsp
    five-spice powder
  • 250
    ml
    orange juice
  • 4
    pieces orange peel
  • 500
    g
    steamed jasmine rice, to serve
 

Method

Place all the ingredients in a large saucepan. Bring to the boil and reduce the heat until just simmering. Place the lid on and cook for 1 ½ hours, turning the chicken once. Break the chicken up with a spoon. Serve in soup bowls with sticky jasmine rice and spoon over plenty of the broth.
