Ingredients (13)

1.00 chicken — free-range
1500.00 ml stock — chicken
750.00 ml soy sauce
250.00 ml brown sugar
24.00 garlic — cloves, peeled
1.00 fresh ginger — sliced
4.00 star anise
2.00 vanilla — pod
3.00 cinnamon — stick
1.00 tsp Chinese five-spice powder
250.00 ml orange juice
4.00 orange — peel only
500.00 g rice — jasmine, steamed to serve

Method:

Place all the ingredients in a large saucepan. Bring to the boil and reduce the heat until just simmering. Place the lid on and cook for 1 ½ hours, turning the chicken once. Break the chicken up with a spoon. Serve in soup bowls with sticky jasmine rice and spoon over plenty of the broth.
