Soya curry

    onions, sliced into rings
  • 2
    cloves garlic, crushed
  • 5
    ml
    fresh ginger, grated
  • oil
  • 1
    whole cinnamon stick
  • 5
    ml
    mild curry powder
  • 2
    ml
    ground cumin (jeera)
  • 2
    ml
    ground coriander
  • 2
    ml
    turmeric
  • 1
    tomato, skinned and finely chopped
  • 100
    g
    herb-flavoured soya mince
  • 125
    ml
    peas
  • salt and black pepper
 

Method

Sauté the onion, garlic and ginger in a little oil until the onions are soft. Add the cinnamon stick and other seasonings and stir-fry for another minute. Add the tomato and soya mince with about 500 ml water and simmer until the soya is soft, at least 15 minutes. Add the peas just before the end of cooking time and season to taste with salt and pepper. Simmer until the peas are heated through. Serve with rice, chutney, banana slices and coconut or a fresh salad. Serves 3-4.
