Soya-braised fish with Spring onion

Ingredients

    ml
    soya sauce
  • 60
    ml
    fino or dry sherry
  • 5
    ml
    sugar
  • 5
    ml
    white-wine vinegar
  • 5
    ml
    fresh ginger, grated
  • 15
    ml
    sunflower oil
  • 400
    g
    hake or Cape-whiting steaks
  • 4
    spring onions, cut into 2cm pieces
 

Method

10 mins
 
1. Combine the soya sauce, sherry, sugar, vinegar and ginger in a bowl. Heat the sunflower oil in a frying pan. When the oil is hot, add the fish and cook it for two to three minutes on each side, depending on how thick the individual portions are.
2. Pour the sauce over the fish, then simmer covered for one to two minutes. Turn over and add the spring onions. Cook for a further one to two minutes. Serve hot with rice and steamed green vegetables.
