Souvlaki (lamb kebabs)

    olive oil

  • 1
    lemon, juice and rind
  • 1
    clove garlic, crushed
  • 25

    dried origanum or marjoram
  • 20

    fresh mint, chopped
  • 7
    ml
    dried thyme
  • 500

    cubed lamb
  • salt
  • pepper
  • 50
    g
    feta cheese, crumbled
 

Method

 
Blend all the ingredients for the marinade and pour over the meat cubes. Marinate the meat for at least 6 hours.
Lightly season the meat with salt and pepper and grill or pan-fry until browned.
Thread a mint leaf on to a kebab skewer, followed by the cubes of meat.
Make four kebabs and arrange on a serving platter.
Sprinkle with feta cheese. Serve with pita bread and tzatziki.
