    eggs
  • 30
    ml
    water
  • 250
    ml
    cake flour
  • 250
    ml
    cornmeal
  • 5
    ml
    paprika
  • salt and milled black pepper to taste
  • sunflower oil for frying
 

Method

 
Wash chicken and pat dry. Beat egg and water together. Mix flour, cornmeal, paprika and seasoning together. Heat oil in a deep frying pan or fryer (to 180 ºC), until hot but not smoking. Dip chicken pieces into egg mixture, then coat with flour mixture. Shake off excess. Deep fry in small batches until golden and crisp. Take care not to undercook the chicken. It should take 12 to 20 minutes. Drain on a wire rack. Serve hot or at room temperature with chips and braised okra or a salad. TOTAL KILOJOULE COUNT: 14 310 kJ (3 420 Cal). A portion: 3 580 kJ (855 Cal).
