    buttermilk or cream

    cloves garlic, crushed

    onion, finely chopped
  • 1
    ml
    chilli flakes
  • 3
    ml
    salt
  • 4
    large pieces chicken
  • 90
    ml
    cake flour
  • 2
    ml
    salt
  • 2
    ml
    cayenne pepper
  • 2
    ml
    freshly ground black pepper
  • 2
    ml
    paprika
  • oil for shallow-frying
 

Method

 
Mix the buttermilk or cream, garlic, onion, chilli flakes and salt together. Place the chicken pieces in a non-metallic dish, pour over the buttermilk mixture, cover and marinade overnight. Mix the cake flour, salt, cayenne pepper, black pepper and paprika. Lift the chicken out of the marinade and roll in the flour mixture until well coated. Chill the chicken pieces for 45 minutes. Heat the oil (about 1 cm deep) in a pan and fry the chicken pieces until golden brown and cooked through about 10 minutes on each side. Remove from the pan and drain well. Serve with a salad. Serves 4.
