    dry white breadcrumbs
  • 80
    ml
    cake flour
  • 30
    ml
    chicken spice
  • 4
    ml
    curry powder
  • 60
    ml
    golden syrup
  • 30
    ml
    lemon juice
  • 50
    ml
    brown sugar
  • 60
    ml
    oil
  • 12
    chicken thighs, skin and fat removed
 

Method

 
Combine the breadcrumbs, flour, chicken spice and curry powder and set aside.
Mix the syrup, lemon juice and sugar.
Heat oil in a frying pan or large, heavy-based saucepan.
Dip each chicken piece in the syrup mixture, then in the crumb mixture and fry in the heated oil until golden brown and crisp.
Turn frequently.
Cover, reduce the heat slightly and cook until the chicken is done.
Serve hot or at room temperature with potato chips and salad.
