Ingredients (11)

10.00 kg venison
3.00 kg pork spek
125.00 ml salt
25.00 ml freshly ground black pepper
100.00 ml curry powder
25.00 ml flavour enhancer
375.00 ml chutney
125.00 ml vinegar — brown
750.00 ml wine — red
10.00 kg mutton — or pork lard
700.00 g cleaned casings

Method:

Cube the meat and bacon and add the rest of the ingredients, except the lard and casings. Mix well and leave to marinate for 1-2 hours. Add the fat and then mince. (Do not handle the meat too much.) Place the casings over the mincer and stuff with meat mixture. Roll up and freeze until needed. Cook over medium coals and serve with griddle cakes and green fig jam.
