    venison, such as springbok
  • 3
    kg
    pork spek, bacon or sheep's tails
  • 125
    ml
    salt
  • 25
    ml
    pepper
  • 100
    ml
    curry powder
  • 25
    ml
    flavour enhancer
  • 375
    ml
    chutney
  • 125
    ml
    brown vinegar
  • 750
    ml
    red wine
  • 10
    kg
    mutton or pork lard, finely diced
  • 700
    g
    cleaned casings
 

Method

 
Cube the meat and bacon and add the rest of the ingredients, except the lard and casings. Mix well and leave to marinate for 1-2 hours. Add the fat and then mince. (Do not handle the meat too much.) Place the casings over the mincer and stuff with meat mixture. Roll up and freeze until needed. Cook over medium coals and serve with griddle cakes and green fig jam.
