Soft cheese stuffed mushrooms

    large mushrooms, cleaned
  • salt and freshly ground pepper
  • 1/2
    cup
    bread crumbs
  • 30

    butter
  • 1
    small onion, finely chopped
  • 1
    cloves
    garlic, crushed
  • 1
    handful
    chives, finely sliced
  • 1
    handful
    parsley, finely chopped
  • 4
    sprig
    thyme, leaves picked
  • 2
    Tbs
    olive oil
  • 100
    g
    soft cheese
 

Method

Preheat oven to 180°C.

Place mushrooms onto a baking tray and season with salt and freshly ground pepper.

Heat butter in saucepan and gently sauté onion and garlic until soft and translucent.

Add breadcrumbs and continue to fry until golden brown and crispy.

Remove from heat and mix in the chives, parsley and thyme leaves.

Top each mushroom with 25g of soft cheese and a spoonful of crispy breadcrumbs (Boursin cheese is recommended.)

Drizzle with a little olive oil and roast in oven for about 20 – 25 minutes or until topping is golden brown and mushrooms are juicy and cooked through.
