Snoek in lemon sauce

    kg
    snoek, cleaned and butterflied
  • salt and freshly ground black pepper
  • BASTING SAUCE
  • 50
    g
    butter
  • 45
    ml
    oil
  • 30
    ml
    golden syrup
  • 30
    ml
    lemon juice
 

Method

 
Preheat the oven to 160 ºC. Season the fish with salt and pepper to taste and place in an oven pan. Heat all the ingredients for the basting sauce and bring to the boil. Remove from the heat and pour over the fish. Bake the fish for about 30 minutes or until the fish flakes easily with a fork and is no longer glassy. Turn the fish after the first 15 minutes of the cooking time. Remove from the oven and heat the oven grill. Grill rapidly until well-browned on top. Serves 6.
