Snails with sour cream

  • 800
    g
    snails in water
  • 15
    ml
    lemon juice
  • 15
    ml
    butter
  • 6
    cloves garlic, crushed
  • 15
    ml
    freshly chopped parsley
  • 250
    ml
    (l c) sour cream
  • 15
    ml
    cornflour (optional)
  • 125
    ml
    milk
  • salt and freshly ground black pepper
 

Method

 
Drain the snails and rinse under cold water. Heat the lemon juice, butter, garlic and parsley in a large pan and add the snails. Stir-fry for one minute. Add the sour cream and simmer for a few minutes. Blend the cornflour with the milk and add. Simmer until the mixture thickens. Season with salt and pepper and serve immediately with rolls. Serves 6.
