Ingredients (12)

1 kg baby octopus — tentacled
125 ml fresh chillies — 573
22 ml lemon juice
1 lemon lemon — zest only
1 onion onion — finely chopped
2 cloves garlic — cloves, sliced
5 ml paprika — smoked Spanish
1 bay leaves
125 ml vinegar — cider
125 ml vinegar — white wine
5 ml freshly ground black pepper
24 bread

Method:

Wash baby octopus tentacles (smaller regular tentacles) really well.
Heat olive oil, lemon juice and the thinly sliced peel of lemon in a pot.
Add tentacles, and poach for 4 minutes.
Remove with a slotted spoon and set aside.
Add chopped onion and sliced garlic and cook in oil and lemon mixture until soft, but not brown.
Add smoked Spanish paprika, 1 bay leaf, cider vinegar, white wine vinegar, and milled pepper, and bring to the boil.
Reduce heat and simmer for 5 minutes.
Place in the fridge and marinate for 24 hours.
Bring to room temperature before serving with chunks of bread.
