Smoked trout and spinach salad

Ingredients

    baby potatoes, halved
  • 15
    ml
    wholegrain mustard
  • 15
    ml
    horseradish
  • 45
    ml
    olive oil
  • 1
    large onion, thinly sliced
  • 350
    g
    smoked trout (or smoked salmon)
  • 350
    g
    baby spinach leaves
  • 90
    ml
    balsamic dressing (see recipe)
 

Method

35 minutes
 
1. Parboil the potatoes for 5 minutes. Drain and place in a roasting pan. Mix the mustard, horseradish and olive oil together and pour over the potatoes. Toss to coat. Roast in a preheated oven at 200 ºC for 30 minutes, turning occasionally. 2. Remove from the roasting pan and place in a large bowl. Add the onion, smoked trout and baby spinach leaves and toss together. Divide salad between 4 serving plates and drizzle with balsamic dressing.
