Ingredients (8)

450.00 g baby potatoes — halved
15.00 ml wholegrain mustard
15.00 ml horseradish
45.00 ml fresh chillies — 573
1.00 onion — large, thinly sliced
350.00 g smoked trout
350.00 g baby spinach
90.00 ml vinegar — balsamic dressing

Method:

1. Parboil the potatoes for 5 minutes. Drain and place in a roasting pan. Mix the mustard, horseradish and olive oil together and pour over the potatoes. Toss to coat. Roast in a preheated oven at 200 ºC for 30 minutes, turning occasionally.
2. Remove from the roasting pan and place in a large bowl. Add the onion, smoked trout and baby spinach leaves and toss together. Divide salad between 4 serving plates and drizzle with balsamic dressing.
