Smoked springbok salad

  • 150
    g
    smoked springbok slices or wet beef biltong, thinly sliced
  • a variety of fresh salad greens such as rocket and mustard and butter lettuce
  • fresh basil and fennel
  • a few plump raisins
  • SALAD DRESSING
  • 200
    ml
    olive oil
  • 20
    ml
    orange juice
  • 5
    ml
    Tabasco sauce
 

Method

 
Arrange the meat on a safari platter along with the salad greens, basil and fennel. Scatter the raisins on top. Blend the ingredients for the salad dressing and sprinkle over the salad. Serves 2-4.
