Smoked snoek spread

    smoked snoek, deboned and finely flaked
  • freshly ground black pepper
  • lemon juice
  • 250
    g
    cottage cheese with chives
  • 1
    small onion, finely chopped
  • 50
    ml
    parsley, finely chopped
  • 10
    ml
    grated lemon rind
  • 10
    ml
    capers, finely chopped if preferred
  • 125
    ml
    mayonnaise
 

Method

 
Season the snoek with pepper and lemon juice to taste. Add the cottage cheese and onion and mix. Add the remaining ingredients and mix. Chill until needed. Makes about 4 x 250 ml.
