    oil

    smoked pork sausages (or any spicy sausages), thickly sliced
  • 1
    large onion, chopped
  • 1
    green pepper, chopped
  • 2
    celery sticks, chopped
  • 1
    x 410 g can chopped tomatoes
  • 500
    ml
    uncooked rice
  • 1
    Litres
    beef stock
  • salt and cayenne pepper to taste
  • 65

    chopped spring onions
  • 65
    ml
    chopped parsley
 

Method

In a large saucepan, heat oil and sauté sausages, onion, green pepper and celery until soft. Stir in tomatoes.
Add rice and stock. Season with salt and cayenne pepper.
Bring to the boil, lower heat and simmer jambalaya over medium heat for 30 minutes, or until rice is cooked.
Stir in spring onions and parsley. Serve immediately.
