Smoked sausage jambalaya

    smoked Russian pork sausages, sliced
  • 1
    large onion, chopped
  • 1
    green pepper, chopped
  • 2
    celery sticks, chopped

    chopped tomatoes
  • 500
    ml
    uncooked American rice
  • 1
    Litres
    beef stock
  • salt and cayenne pepper
  • 65
    ml
    chopped spring onion
  • 65
    ml
    chopped fresh parsley
 

Method

 
1. In a large saucepan, heat oil and sauté sausages, onion, green pepper and celery until soft. Stir in tomatoes. 2. Add rice and stock. Season with salt and cayenne pepper. 3. Bring to the boil, then lower the heat and simmer over medium heat for 30 minutes, or until rice is cooked. 4. Stir in spring onion and parsley. Serve immediately. VARIATIONS Add 500 g shrimps when adding rice. Use ham instead of sausage. Ring the changes by using diced beef, chicken or seafood.
