Smoked salmon on potato gratin

Ingredients

    ml
    cream
  • 2
    ml
    freshly ground black pepper & salt to taste
  • 3
    medium potatoes, peeled and thinly sliced
  • 5
    ml
    butter
  • 180
    g
    smoked salmon, sliced
  • 5
    ml
    capers
  • fennel to garnish
  • 100
    g
    ricotta cheese
 

Method

45 min
 
Set oven temperature to 180 °C.
Mix the cream and seasoning in a bowl.
Toss the sliced potato in the cream and layer in a buttered baking dish.
Pour over the remaining cream and press the potato slices down.
Cover and bake for 45 minutes or until potatoes are tender to the tip of a sharp knife.
Set aside to cool slightly. Divide between two plates.
Top with salmon and capers.
Garnish and serve with a dollop of ricotta cheese.
