Smoked salmon, cream cheese and leek frittata

Ingredients (8)

6.00 eggs — jumbo
60.00 ml cream — thick
salt and freshly ground black pepper
60.00 ml butter
4.00 baby leeks — chopped
125.00 ml smoked salmon — ribbons
90.00 ml cream cheese
fresh dill — dried

Method:

Beat eggs, cream and seasoning together lightly. Set aside.
Melt butter in a 25 cm frying pan. Add leeks and sauté until soft but not browned, 5 to 8 minutes.
Reduce heat to moderate and pour in egg mixture. Stir to mix well. Cook for 1 minute and add salmon. Cook until base has set (top will still be wet).
Sprinkle cheese over, season with milled pepper and place under a hot grill. Cook until eggs are set and cheese has melted.
Remove from grill, scatter dill over and serve from pan.
