Smoked salmon, cream cheese and leek frittata

    ml
    thick cream
  • salt and milled pepper
  • 60
    ml
    butter
  • 4
    young leeks, chopped
  • 125
    ml
    slivered smoked salmon
  • 90
    ml
    cream cheese
  • fresh or dried dill
 

Method

 
Beat eggs, cream and seasoning together lightly. Set aside. Melt butter in a 25 cm frying pan. Add leeks and sauté until soft but not browned, 5 to 8 minutes. Reduce heat to moderate and pour in egg mixture. Stir to mix well. Cook for 1 minute and add salmon. Cook until base has set (top will still be wet). Sprinkle cheese over, season with milled pepper and place under a hot grill. Cook until eggs are set and cheese has melted. Remove from grill, scatter dill over and serve from pan.
